My Go-To No.1 Salad Dressing

Since I became a Vegan almost three years ago I have definitely learned how to cook. I love reading Cookbooks now. I love to try and think of Vegan Versions of recipes. Living in California we also have access to amazing veggies. Hooray all around.

But the one thing I suck at is Salad Dressings. I kind of don´t like to deal with that. A bit weird, i know. Maybe its because for Dressings you really kind of have to follow a recipe, and I am not good at that. I think it is boring to follow (Food) Instructions, and because of my disobedience I have delivered terrible Salad Dressings too often.  So recently I was like : " This has to stop! I am a Grown Up now, I have to have at least ONE dressing that works."

Long Story short:

I experimented a bit and here is my Sweet Miso Salad Dressing that turns any boring green salad into a bowl of Yummyness.

Inspired by a Matthew Kenney recipe- and a tiiiiny bit modyfied by me. It takes 5-10 minutes to make.

1/2 cup white Miso

1/2 cup Maple Syrup

1/2 cup Mirin

1/4 cup Sesame Oil

Juice of 1 Lemon

Some grated Ginger

1 cup soaked Cashew Nuts (soak at least 30 mins)

1 cup Soy milk

Blend all ingredience till you have a smooth creamy Dressing.

... Tadaa!
