Fight the Flu with Food

This is just a quick `n easy little Stew recepie that I believe helps fight a Cold or Flu. I make it every time me or someone in the family feels under the weather. It is also super quick to make and tastes great the next day.

It is loaded with germ fighting, immune system boosting veggies.

I suggest you use this for a medium pot of soup:

1 whole bulb of garlic (or even 2 if you love garlic!)

1 big yellow onion (or any other type of onion that rocks your boat)

2 Zuchini

2 bundles of Dino Kale (curly will do too)

1 bundle of Cilantro (or any other herb you like)

and IF you want to add starch add:

a couple of small Fingerling potatoes

and/or

a can of Garbanzo beans. And -of course- add a sausage or meatballs if ou feel like it.

 

Heres what you do:

Put on some nice music- and start choppin! Chop up the Onion and Garlic and roast in Olive Oil on the bottom of a medium size pot for a few minutes. Then add all other chopped Ingredients. Add 2-3 cups of water or broth. Mix gently and put a lid on it.

Simmer on a medium high flame till everything is tender 10-15 minutes. Then take the Stew off the heat and let it sit for a few minutes.

Add Salt and Pepper to taste. I prefer to puree the Stew with a puree stick, because I find that all flavours unfold better that way. But if you prefer your stew chunky that works too.

Onion is a Superstar Flu fighter. Not only does it absorb germs it has big time congestion-relieving properties.

Garlic, duh, is a major Antioxidant as well. Its Sulfur compound Allicin fights off the germs and boosts the Immune system. it is also rich in Vitamin C and B6.

Cilantro has tons of Vitamin C.

But Kale is the Winner as the most nutrient dense Food of all of the above. Rich in Vitamin A,C,B6, Potassium and Calcium it will get you back on your feet in no time!
